I totally agree with timster; nothing could replace the originals. The drawing styles were different back when Ranma was animated and I think it would be very difficult to imulate those styles today. They would probably animate on computers and just that would change the feel of Ranma, even if the art was kept, for the most part, the same. It would be... smoother... Eh, I think the original art style is one of the things which made Ranma, Ranma.
Besides, what could you do to make it better? Better fight scenes (more like Bleach or something)? That would remove the general funniness that was in the fight scenes of the original. More angst? ... well, I like angst so...

But I guess they could have had more of a conclusion to the huge amount of angst like at the very end of Love Hina Again. But again, Rumiko Takahashi is known for lots of unresolved angst in his works (Inuyasha anyone?).
At any rate... probability and the sheer number of possible screwups with a remake shoot through the roof for anything as large and widely known as Ranma is. I will admit that if they did decide to do it again... and it turned out just unbelievable, I would watch that same story again. I'm not one to say "THEre ShUld NEVAR b Any RAnmA ReMAke EVAR!!" so i would at least watch it and give it a chance
